Is there a way to set email reminder notifications to only send once? (instead of a follow up at midnight every 24 hours after the limit is reached)

I’m afraid that is not possible unless you release the ticket from it’s pending reminder that.
Reason for that is that Zammad keeps on notifying you about a ticket you didn’t catch up on (yet) to remind you that you might want to have a look.
Personally I don’t think that this behaviour will change, because it’s designed to keep reminding you of open todos.
