What is the best process to follow to migrate correctly zammad database from MariaDB to PostgreSQL (on debian 13) to be ready for Zammad 7.x.

Following the documentation is the best approach:

I know you already know, but just as a reminder, Debian 13 is not yet supported on stable so I would do it on Debian 12 if I were you.
