Install Zammad in Version 5.3 over apt

I had Zammad 5.3 running in Docker / Portainer for 2 years. After an upgrade to version 6.x with several major changes seems too complicated, I want to detach Zammad from Docker and migrate it to a separate VM.
To follow the upgrade path correctly, I want to install Zammad version 5.3 on Ubuntu 22.04 LTS using apt. However, an apt-cache policy zammad does not list Zammad version 5.3 or does not let me install it. What am I doing wrong or does version 5.x simply no longer exist in the apt channel?

Ubuntu 20 was the highest available Ubuntu version at that moment, 22 wasn’t out back then. So you’ll have to start with a lower OS and then dist-upgrade it at a later point to be on latest on every part.
