Change default follow-up type from note to e-mail?

Hey guys,

the default follow-up type for tickets seems to be of the type “note”. Is it possible to change that to “e-mail out”? I couldn’t find such an option anywhere…

No this is not possible.
Imho normally using the “reply” button is the easier and better approach any way, because it will already set your TO address. If you manually choose mail articles upon creation, you need to enter it manually.
