How to get the real sender email?

I think in email raw data we would check for the Received header,
like Received: from a27-92.smtp-out.us-west-2.amazonses.com.

But are we able to get this value in a variable.
And, for me even more interessting, are we able to use this value in triggers ect?

You can use some headers in postmaster filters, but not all. It’s not a option to type a custom header in.
